Bean spread with Moringa
• 100 g dry white beans
• 2 small spring onions
• a handful of wild rocket
• a handful of pistachios or other nuts
• frest thyme
• 1 spoon of Moringa powder
• 4 - 5 spoons of olive oil
Soak the beans for at least 12 hours in advance, if the room temperature exceeds 20 degrees Celsius, I recommend soaking and storing in the refrigerator. Spill the water in which you soaked the beans, rinse in clean water and cook 1-1.5 hours in unsalted water. Beans will absorb some of the water, so put a little more, so when cooked, you would have at least 1 - 1.5 dcl of water left.
Blend the boiled beans until smooth, add salt. Than prepare the rest of the ingredients. In a blender prepare pesto - pour olive oil, add pistachios, wild rocket, spring onions and thyme and mix together. The consistency depends on you. Mix pesto with beans add Moringa powder, mix well and season with an extra touch of salt and thyme.
You have prepared very simple and nutritious spread, which you can serve on parties or as a snack for children, since it contains all the necessary nutrients – plus it tastes good.
