Gluten-free Moringa potatoe dumplings

We need:

• ¾ kg boiled potatoes (old ones)

• 100 g corn grits

• 200 -250 g corn flour

• 2 eggs

• 2 teaspoons of salt

• 2 teaspoons of Moringa mix

Boil the potatoes one day prior to cooking.

Peel cooled potatoes, grate them (I combine fine and coarse grating, but you can choose either one). Once you have grated the potatoes, you can cook a large pot with salted water. Add two eggs, salt, Moringa powder and knead with your hands.  Keep adding flower, until the desired consistency.

Shape potato dumplings, using your hands.  You can certainly make one large dumpling, which you can slice after cooking.

Cook small dumplings for 10 – 12 minutes, big ones for 15 -17 minutes. Cook the dumplings immediately, the dough can not sit for long.

You can serve it with any dish that calls for potato dumplings, even for such classics as roast pork and sauerkraut.
